The fact that all the pepper fruits have turned red does not necessarily mean that the peppers have reached full maturity.
After the fruit enlargement stage, peppers enter the color development and reddening stage. Under normal temperatures, this stage generally lasts about 12–15 days.
The transition from green to red after fruit enlargement does not mean that the peppers are fully mature. It is the red-ripening stage.
After this stage, the peppers generally require another 7–10 days to reach full maturity. This is considered the stage when the peppers have reached their highest level of maturity and, according to the original source, their highest yield.
How to Determine Full Maturity
After the peppers have turned red, wait another 7–10 days.
When the upper part of the pepper fruit begins to lose moisture and soften, cut or break open the fruit and check the seeds.
If the seeds have changed from white to slightly yellow, the pepper is considered fully mature.
At this stage, the peppers have reached their highest yield according to the original cultivation guidance, and defoliant application can then be considered.
